Keto Baked Cauliflower Mac 'N Cheese

Cozy up to a bowl of gooey, steamy mac n’ cheese. Of course instead of the mac, we’re using cauliflower here but you know what I mean. The key is to cut the cauliflower into tiny florets, similar to the size of small pasta. Two types of cheese are essential to this recipe. Sharp cheddar melted into the sauce for flavour and creaminess and mozzarella, grated on top which gets bubbly and golden. The turmeric gives the sauce it’s classic colour, although you don’t taste it at all. Serve this warm out of the oven with a side of fresh greens.

Required Ingredients (8)

  1. 6 cups cauliflower florets, cut into very small pieces (~1 large cauliflower)
  2. 1/2 cup full-fat coconut milk or organic heavy cream
  3. 1 Tablespoon dijon mustard
  4. 1 cup organic sharp cheddar cheese, grated
  5. sea salt and black pepper
  6. 3/4 teaspoon ground turmeric
  7. 1/4 teaspoon garlic powder
  8. 3/4 teaspoon xanthan gum
  9. 1 cup organic full-fat mozzarella cheese, grated
  10. 1/4 cup fresh parsley leaves, chopped

Step by Step Directions

Preheat oven to 400 degrees F. Set aside an 8-inch square baking dish or 2-quart casserole dish or 4 1/2-quart individual baking dishes. Set up a large steamer basket over boiling water. Add cauliflower; steam until crisp-tender, 5-7 minutes. Remove from heat to cool. Transfer cauliflower to mixing bowl, pat dry with paper towel; set aside.

Bring milk or cream to simmer in a small saucepan. Whisk in mustard, cheddar cheese, 3/4 teaspoon salt, 10 cracks black pepper, turmeric, garlic and xanthan gum. Whisk until cheese melts and sauce is smooth and thick, 2-3 minutes.

Remove sauce from heat, pour over cauliflower, and mix well to coat. Transfer to baking dish. Top with mozzarella cheese and bake in oven until bubbly, 15-20 minutes.
To brown cheese, turn oven to broil and cook until golden and crispy on top, 4-6 minutes. Remove from oven. Add parsley.
