Oven-Baked Keto Chicken Nuggets

Healthy fast food, yes it’s possible. Almond meal makes a great grain-free substitution for bread crumbs in these chicken nuggets. They have a spiced crunchy coating on the outside with juicy, tender meat on the inside inside due to the 3-step dredging process. Using chicken thighs instead of chicken breasts is a fantastic way to add more fat into each meal. Nuggets always need a dipping sauce! Don’t forget to make the Smoky Chipotle Mayo and dunk away.

Ingredients Required (10)

  1. 1 pound hormone and antibiotic-free boneless, skinless chicken thighs cut into nugget-size pieces
  2. 1/4 cup coconut flour
  3. sea salt and black pepper
  4. 2 large pastured eggs, beaten
  5. 1 1/4 cup almond flour
  6. 3/4 teaspoon paprika
  7. 3/4 teaspoon garlic powder
  8. 1/2 teaspoon ground turmeric
  9. avocado oil
  10. Smoky Chipotle Mayo

Step by Step Directions

Preheat oven to 400 degrees F; coat baking sheet with a thin layer of avocado oil.

Dredge nuggets: Set up a dredging station with three bowls. Place coconut flour with 1/4 teaspoon sea salt in first bowl, eggs in second bowl, almond flour with 1/4 teaspoon sea salt, 4 cracks black pepper, paprika, garlic powder and turmeric in third bowl. Stir each bowl.

Using fork, dip nuggets in coconut flour, then egg wash, then almond meal, tapping off excess in between each bowl. Place dredged nuggets on baking sheet.

Drizzle nuggets generously with avocado oil and sprinkle with extra sea salt. Flip and repeat. Place in oven on bottom rack to bake for 10-15 minutes. While nuggets bake, whip up the Smoky Chipotle Mayo. Flip nuggets and bake for another 10-15 minutes or until golden and cooked through. Turn oven to broil and cook for 1-3 minutes or until crispy.

Transfer to platter and serve with mayo.
